Distilling
With respect to the traditional rum producing regions of the world, we craft our rum to the highest standards of quality and care for the sugarcane spirits category. Our inspiration for the Three Moons rum comes from the Indonesian rum Batavia Arrack - considered to be the world's oldest luxury spirit, popularised by the Dutch in Europe in the 17th century.

Raw Ingredients
For a unique New Zealand twist, we use kumara to create a fermentation starter that adds a distinguished, local quality to our rum. It also acts as the perfect environment for the yeast to develop its colony before we pitch it into the blackstrap molasses mash for fermentation. The fermented mash is then double pot distilled in a very similar process to the Jamaican rums. Finally, we rest the spirit in ex-Pinot Noir casks sourced from local vineyards for three months before being lightly filtered with New Zealand rainwater, chosen for its purity, and bottled with no extra sugar or colouring added.

Tasting notes
The result is a quality freshly distilled spirit with notes of golden kiwi fruit, honey, pear and citrus - an unmistakably kiwi rum.
