VINEYARD: The Madeira Wine Company. Started as an association of wine producers in 1923, and now is property of the Blandy family since 2011. With centuries of experience in the art of winemaking, the particular heating and fortification processes implemented in their wines have positioned the brand in the top places among connoisseurs.
GRAPES: Tinta Negra Mole.
AGEING: Maturation for two years in Brazilian stainwood vats.
PREPARATION: This is a rich wine that falls in the category of fortified wines. The Madeira region in Portugal is well known for the particular heating added in the maturing stage of their wines, and Madeira Vat 22 Island Bottled is not the exception. This became as an accident, with the elevated temperatures during shipping in the 15th and 16th centuries, and currently is done artificially, in a process known as estufagem. The fortification is done using brandy. The grapes are handpicked, analysed, classified, and transported to the winery for vinification. Fermentation is conducted in stainless steel casks at a controlled temperature. Fortification occurs seven days after fermentation. The estufagem is performed by gently heating at 45?C for four months, and then allowing stabilization for two years.
PAIRING: Madeira Vat 22 Island Bottled is the perfect dessert wine, also delicious with all kinds of cheese, especially old cheese.
RIGHT SERVING TEMPERATURE: 16?C
Alc 17.5%
