Be generous but don't run out

I used to drizzle Marsala on my med recipes and learned it pays to be a little more generous to gain the full Marsala flavour especially with quality meats, if not too over generous early then add again a shot (about 25ml) towards the end or final stir into the sauce, sipping of course to test.
