Since 1648, 10 generations of the Meric family have been making wine at Ch?teau Bel-Air in the Sainte Croix du Mont district, 40 km south of Bordeaux city. The main focus is on sweet wines, reminiscent in style of the famous Sauternes versions, but the house also produces both dry white and red wines under the Bordeaux appellation.

On the 30 hectares of vineyards owned by the Meric family in Sainte Crox du Mont, the grapes semillon, sauvignon blanc and muscadelle are grown, which are typically included in the sweet wines of the area. The vines are on average 30-40 years old, and the grapes must be infested with botrytis - a special fungal species that settles in the grape skins, which thereby ruptures, whereby part of the juice evaporates. It gives a higher concentration of both sugar, acid and glycerol in the ripe grapes, which are harvested continuously and sorted berry by berry.

Le Pin Sacriste consists of a blend of 80 percent. semillon, 15 pct. sauvignon blanc and 5 pct. muscadelle. All grapes are infested with botrytis - also called noble rot - and are only harvested when they are fully ripe. The wine is stored for 12 months in oak barrels.

The result is a golden wine with nuances of exotic fruit and honey and a perfect balance of sweetness and acidity.
