"Clos Haut-Peyraguey 2021, from appellation Sauternes, is a wine of great finesse, produced under demanding climatic conditions. The vines, planted at a density of 6,666 vines per hectare on gravelly-sandy soils with a clay subsoil, have benefited from environmentally-friendly viticulture. The grape varieties are 60% Semillon and 40% Sauvignon Blanc, with an average age of the vines of 38 years.
The 2021 vintage was marked by a mild, rainy winter, a spring alternating between rain and sunshine, and a temperate summer. The harvest, carried out by hand in four successive selections between October 1 and 28, enabled a meticulous selection of botrytized grapes. Vinification included light temperature-controlled settling, followed by fermentations in new or one-wine barrels, adapted to the tastings. Racking and mutage have been adjusted to achieve optimum balance."
